Crispy Zucchini & Sweet Corn Fritters with Salsa

Summer in Perth calls for light lunches that don't weigh you down. These Zucchini & Sweet Corn Fritters are a massive hit with the kids during school holidays and a great way to use up the generous amount of fresh veggies in our weekly boxes.

Served with a quick, fresh tomato salsa, they are crispy on the outside, fluffy on the inside, and full of WA-grown goodness.

How to Make It

1 Squeeze the Zucchini (Important!)

This is the secret to crispy fritters! Place your grated zucchini in a clean tea towel or sieve. Squeeze out as much excess liquid as you possibly can. Discard the liquid.

2 Make the Batter

In a large bowl, combine the "squeezed" zucchini, corn kernels, spring onions, eggs, flour, and feta. Season with salt and pepper. Mix until just combined. If it's too dry, add a splash of milk.

3 Cook the Fritters

Heat oil in a large non-stick frying pan over medium heat. Add 2 tablespoons of batter per fritter into the pan. flatten slightly. Cook for 3-4 minutes on each side until golden brown and cooked through.

4 Serve with Salsa

While fritters are cooking, toss the tomatoes, red onion, oil and balsamic in a small bowl. Serve fritters warm topped with the fresh salsa.

💡 Chef's Tips

Avoid Soggy Fritters: We can't stress this enough—squeeze that zucchini! If there is too much water, the fritters will be mushy inside.

Make Ahead: These are fantastic cold in school lunchboxes. They can also be frozen for up to a month.

Add Protein: Serve with a side of crispy bacon or smoked salmon for a fancy weekend brunch.
