Rustic Summer Harvest Galette

Sometimes you want a meal that celebrates the vegetables rather than hiding them. This "Galette" (a fancy word for a rustic, free-form tart) is our favourite way to do just that.

It looks like a stunning centrepiece for a summer lunch or picnic, but it's incredibly easy to throw together. By using the fresh Zucchini, Tomatoes, and Onions from your Large Veggie Box, you create a dish that tastes as vibrant as it looks.

The Base

  • 2 sheets Frozen Puff Pastry, thawed (Pantry Staple)
  • 100g Cream Cheese or Ricotta
  • 1 Egg, beaten (for glazing)
  • Salt and Cracked Pepper

How to Make It

1 Prepare the Pastry

Preheat oven to 200°C. Place the thawed puff pastry sheets on a baking tray lined with baking paper. You can join two sheets together to make one large tart, or make two individual ones. Prick the centre with a fork, leaving a 3cm border around the edge.

2 The Creamy Layer

Spread the cream cheese or ricotta over the pastry base, staying inside that 3cm border. This creamy layer stops the pastry from getting soggy and adds a lovely richness.

3 Artistic Assembly

Arrange your zucchini rounds, capsicum strips, and onion slices in a circular pattern over the cream cheese. Scatter the cherry tomatoes on top. Season generously with salt and pepper.

4 Fold & Bake

Fold the 3cm pastry border up and over the edge of the filling, pleating it as you go to create a rustic crust. Brush the pastry edge with the beaten egg. Bake for 25-30 minutes until the pastry is puffed and golden brown.

💡 Chef's Tips

Avoid the "Soggy Bottom": If your zucchini looks very juicy, sprinkle the slices with salt and let them sit on a paper towel for 10 minutes before assembling. This draws out excess moisture.

Make it Vegan: Use vegan-friendly puff pastry (most supermarket brands are!) and swap the cream cheese for a layer of hummus or pesto.

Serving: Let it cool for 5 minutes before slicing. It's delicious warm, but we actually prefer it cold for a beach picnic!
